Smoked Chicken, Spinach & Pasta Salad

Ingredients

  • 1 Package of Villari Brothers Smokehouse CraftedTM Chicken Breasts (2 Chicken Breasts)
  • 1 16 ounce Package of Penne Pasta, cooked according to directions on package and drained
  • 1 10 ounce bag of Fresh Baby Spinach
  • 1 Cup of Mandarin Oranges, without juice
  • 1 Cup Strawberries, quartered
  • 1/2 Cup Dried Craisins (dried Cranberries)
  • 1/2 Cup of your favorite Nuts (Pecans are great, but you can substitute what you like)
  • Dressing:
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup champagne vinegar
  • 1/4 cup plain yogurt
  • 1 Tablespoon Dijon mustard
  • 3 Tablespoons honey
  • 1/2 cup orange juice
  • 2 teaspoons Poppy Seeds

Directions

  1. Salad:
  2. Remove bones and skin and shred Smoked Chicken Breasts. Place chicken in bowl.
  3. Add Cold Pasta, Spinach, Fruit and Nuts to the bowl and toss gently.
  4. Refrigerate until time to serve.
  5. Do not add dressing until ready to serve.
  6. Dressing:
  7. Place all ingredients in a blender and pulse until combined.
  8. Pour the dressing over the salad and toss gently just before serving.
