Do
- Use cooking thermometer – make sure internal temperature reaches 145°F
- Let rest after cooking
- Season before grilling
- Make sure grates are clean and use a non-stick spray or cooking oil
- Marinade for extra flavor and tenderness
Don’t

- Let grill get too hot
- Flip repeatedly on the grill
- Apply sauces too early; especially sugar-based sauces as these tend to burn
- Use a sharp utensil to flip; this can pierce the pork and let juices escape making the meat less tender
- Cook to an internal temperature below 145°
