Ingredients

  • 4 Sprigs of Fresh Thyme
  • 4 Sprigs of Fresh Rosemary
  • 1 tsp Smoked Hungarian Paprika
  • 5 cloves garlic, minced
  • Salt and Pepper (to Taste)
  • 1 tbsp olive oil
  • 3 lbs. approximately of Villari Prime Skinless Pork Belly
  • 1/3 c Clove Honey
  • 1/3 c Vermont Maple Syrup

Directions

  1. Preheat oven to 375 ° F.
  2. In a bowl, mix the thyme, rosemary, paprika, garlic, salt, pepper and olive oil.
  3. Place the meat in a roasting pan, Fatty side up, and spread half of the seasoning on the meat. Turn the Belly over and make shallow cuts on the surface of the skin and spread the rest of the seasonings on the skin side.
  4. Cover with aluminum foil and place in oven, let braise for about an hour.

  6. Mix the Honey and Maple Syrup together and brush with the sweet mixture and return to 350 ° F. oven for 30 t0 40 minutes skin side up uncovered, and let it roast.
  7. Sugars should caramelize and become a dark mahogany color of brown.
  8. Let cool for 20 minutes and slice. This is a very rich flavor and you will want to serve it sparingly as an appetizer. It is great on the side of a vinegar and oil dressed salad.
