Bacon-Wrapped Stuffed Chicken Breast with Maple-Glazed Brussels Sprouts

Ingredients

  • 8 slices Villari Hickory Hardwood Smoked Thick-Cut Bacon
  • 4 boneless, skinless chicken breasts
  • 1/2 cup cream cheese
  • 1/4 cup spinach, chopped
  • 1/4 cup grated Parmesan
  • 1 tbsp garlic powder
  • 1 lb Brussels sprouts, halved
  • 1/4 cup maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 400°F.
  2. Mix cream cheese, spinach, Parmesan, garlic powder, salt, and pepper.
  3. Stuff chicken breasts with the mixture and wrap each in 2 slices of bacon. Secure with toothpicks.
  4. Roast chicken on a baking sheet for 25-30 minutes, until bacon is crispy and chicken is cooked through.
  5. Meanwhile, toss Brussels sprouts in olive oil, salt, and pepper. Roast for 20 minutes.
  6. In a small bowl, whisk together maple syrup and Dijon. Drizzle over roasted Brussels sprouts.
  7. Serve the bacon-wrapped chicken alongside the maple-glazed Brussels sprouts for a hearty and flavorful meal!
