
Ingredients
- 8 Slices of Villari Brothers Bacon, cut crossways in Half
- 16 Medium Sea Scallops
- 8 ounces Teriyaki Sauce
- 2 ounces Soy Sauce
- 8 ounces Dark Brown Sugar
- 2 Tablespoons Shredded Fresh Ginger Root
- 2 Cloves Garlic Minced
- 1/2 teaspoon Red Pepper Flakes
- Wooden Toothpicks (do not use plastic toothpicks)
Directions
- Line 2 baking sheets with aluminum foil.
- Mix the Teriyaki, Soy Sauce, Brown Sugar, Garlic and Ginger together in a bowl.
- Wrap each Scallop with a Half Strip of Bacon and secure it with a toothpick.
- Marinate the Wrapped Scallops in the Teriyaki Mixture for 30 minutes in the refrigerator.
- Move an oven rack about 5 or 6 inches from the broiler and preheat broiler.
- Remove Marinated Scallops from refrigerator and arrange on one of the foil lined baking pans.
- Broil until lightly charred, about 5-6 minutes.
- Remove from oven and place the “bottom” side up on the clean foil lined baking sheet.
- Place back in oven and broil until lightly charred on this side, about 5-6 minutes.
- Remove from oven and let rest for 2-3 minutes.
- Remove toothpicks and serve on a bed of baby greens with Raspberry Vinaigrette Dressing.
