American Barbecue Grilled Pork Chop With Rice Pilaf & Broccoli

Ingredients

  • 4 Villari American Barbecue pork chops
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • 2 tsp olive oil
  • 1/2 onion, Brunoise (small dice)
  • 1/4 cup celery, Brunoise (small dice)
  • 1/2 cup carrots, Brunoise (small dice)
  • 1 cup uncooked white long-grain rice
  • 1/2 tsp garlic (minced)
  • 1/2 tsp ground turmeric
  • 2 cups chicken broth
  • 6 cups broccoli florets

Directions

  1. Heat grill to medium high heat, about 450 to 500 degrees F.
  2. Prepare your chops by rubbing both sides with olive oil, salt and pepper.
  3. In a skillet over medium heat, add onion, celery and carrots; cook 3 minutes, until translucent. Add the garlic, stir and cook for 1 more minute.
  4. Add the rice and stir until the rice is lightly toasted. Add the turmeric to the skillet and stir until evenly combined.
  5. Stir in the chicken broth and bring to a boil. Reduce heat to a simmer, cover and cook for 18 to 20 minutes, or according to instructions on rice package
  6. While rice is cooking, place Never Ever™ boneless pork chops on grill
  7. To achieve the diamond grill marks, grill the chops by searing one side for 2 minutes over the medium high heat, turn a quarter turn for 2 minutes more. Turnover and sear for 2 minutes turn a quarter turn again and sear for 2 more minutes. Check temperature by inserting thermometer in the side of boneless pork chop to center. Looking for temperature of 145 degrees F. maximum for medium doneness. Remove the boneless chops to an upper rack or to a spot with indirect heat, turn temperature of grill down to medium low to finish cooking, until 145 degrees F. is obtained.
  8. Bring 4 or 5 quarts of water to a boil. Add broccoli florets and cook for 2 maybe 2 ½ minutes or until slightly tender and bright green
  9. Use a colander to drain the broccoli and place the broccoli into the ice bath. Drain and gently pat dry
  10. Remove rice from skillet, add broccoli and cook 2 or 3 minutes or until it becomes hot and tender. Add in minced garlic and cook an additional 1 or 2 minutes
  11. Remove chops from grill, plate rice, broccoli, and chops. Season with salt and pepper to taste
