Ingredients
- 2 Racks Villari Brothers Baby Back Ribs
- 1 1/2 teaspoons Salt
- 1 teaspoon Freshly Ground Black Pepper
- 1 teaspoon Celery Salt
- 6 tablespoons of your favorite BBQ Rub*
- BBQ Sauce**
- *Combine the following ingredients to make your own Rub:
- 10 Tablespoons Paprika
- 4 Tablespoons Cayenne
- 2 Tablespoons Dark Chili Powder
- 5 Tablespoons Freshly Ground Black Pepper
- 6 tablespoons Garlic Powder
- 3 Tablespoons Onion Powder
- 5 Tablespoons Salt
- 3 Tablespoons Dried Oregano
- 3 Tablespoons Dried Thyme
- **Use your favorite BBQ Sauce or use these ingredients to make your own:
- 1 Medium Onion, chopped
- 1 Medium Green Bell Pepper, chopped
- 1 Tablespoon Vegetable Oil
- 2 Garlic Cloves, minced
- 2 -3 teaspoons Chili Powder, depending on your taste
- 1/2 teaspoon Cayenne Pepper
- 1/4 teaspoon Coarsely Ground Black Pepper
- 1 Cup Ketchup
- 1/3 Cup Molasses
- 1 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Spicy Brown Mustard
- 1 teaspoon Hot Pepper Sauce (use more or less depending on your taste)
Directions
- Preheat oven to 275º degrees F.
- Line a large baking sheet with a piece of aluminum foil that is large enough to cover the pan twice (you will be folding this over the ribs and sealing it). Arrange the Ribs, meat side down, on the foil covering the pan.
- In a bowl, combine the BBQ Rub from above (or your own) with the Salt, Pepper, and Celery Salt. Coat the ribs thoroughly on both sides with Rub, dividing it evenly between the 2 Racks.
- Fold the extra length of foil over the Ribs, and seal it tightly on all sides. Place the ribs in the oven and bake, undisturbed, for 2 1/2 hrs. - 2 hrs. and 40 minutes. Ribs should be tender. (Using a oven mitt, twist one of the bones to check for tenderness.)
- Remove Ribs from the oven and increase oven temperature to 450º F.
- Peel back the foil so that the ribs are exposed. Baste Ribs on both sides with BBQ Sauce (your favorite or the recipe above), using tongs to turn the Ribs.
- Place Ribs, meaty side up, back in the oven, leaving the foil open. Cook until the barbecue sauce is thickened and lightly browned, 5-10 minutes. Remove from oven and repeat basting of Ribs and return to oven for another 5-10 minutes.
- Remove the ribs from the oven and set aside to cool briefly before cutting between the ribs and serving.
- Serve with more barbecue sauce if you choose
- If you want to use a grill to cook your Ribs, please do, but remember ... low and slow to make tender Ribs that are “Lip Smacking Good.”
