Pork Cubano Sandwich

Ingredients

  • 8 ounces Villari Brothers Roasted Pork, thinly sliced (a great way to use leftover pork loin or tenderloin roast)
  • 8 ounces Villari Brothers Smoked Ham, thinly sliced (or pre-sliced deli ham)
  • 1 Large Loaf of Ciabatta Bread or Italian Bread, approx. 10-12 inches long
  • 8 ounces Swiss Cheese, thinly sliced
  • 4 whole Dill Pickles, sliced thin lengthwise
  • 6 thin slices Red Onion
  • 2 Tablespoons Mayonnaise
  • 2 Tablespoons Yellow Mustard
  • 2 tablespoons melted Butter
  • Mojo Sauce (see below)
  • Mojo Sauce: 1/4 cup Olive Oil
  • 6 Cloves Garlic, minced
  • 1/4 cup fresh squeezed Orange Juice
  • 1/4 cup fresh squeezed Lime Juice
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Black Pepper
  • 1/2 teaspoon Ground Cumin

Directions

  1. Mojo Sauce: Heat the Olive Oil in a Sauté Pan. Add the Garlic and cook over medium heat, about 1 minute, but no more than 2 minutes. Add the Orange Juice, Lime Juice, Salt, Pepper and Cumin.
  2. Cook, stirring constantly, for about 2-3 minutes. Transfer the Sauce to a bowl to cool.
  3. The Pork: Turn the oven to warm setting 175° - 180° F.
  4. Cut the Loaf of Bread in half horizontally, and spread the mayonnaise on the bottom half.
  5. Place Roast Pork and Ham in a bowl. Stir the Mojo Sauce (it needs to be stirred before each use because it separates quickly) and drizzle some of it on the meat.
  6. Layer the Pork and Ham on top of the Mayonnaise, then layer the Swiss Cheese, Onions and Pickles on the meat.
  7. Spread the mustard on the top piece of bread and close the sandwich. Cut the sandwich in half crosswise.
  8. Brush half of the melted butter on the tops of the sandwiches. Place each sandwich butter-side down on a large sheet of aluminum foil and brush the bottoms with butter. Fold the foil around the Sandwiches so they're completely encased.
  9. Heat a large cast iron frying pan on low heat. When the pan is hot, place 1 foil wrapped sandwich in the pan. Place another cast-iron skillet (or some other heavy object) on top of the sandwich, push down gently to compact the Sandwich, and cook undisturbed for 7-8 minutes.
  10. Remove the top skillet and flip the Sandwich, then place the skillet back on top of the Sandwich and cook undisturbed until the cheese has melted and the sandwich is warmed through (about another 7-8 minutes.
  11. Place this first Sandwich on middle rack in the oven to keep warm, and repeat with the second Sandwich.
  12. When both are ready, remove from the foil and cut into desired portion sizes for serving.
